Tenmoku is a glaze tradition with roots in Song dynasty China, brought to Japan by Zen Buddhist monks and refined by Japanese potters into something entirely their own. The deep black lustre and natural variation in every piece mean no two bowls are alike. Chawanmushi — 茶炓蒸し — is one of Japan’s most elegant starters: a silken steamed egg custard eaten with a spoon, one of the few Japanese dishes where chopsticks simply won’t do.
