It has been made from stain resistant Damascus steel with a super smooth mahogany wood handle. For knife aficionados the blade has a hardness Rockwell C scale of 57. Usuba, which means thin blade, has been sharpened on one side, a style known as kataba in Japanese which allows for the cutting of thinner slices but requires more skill to use. These Japanese kitchen knives have a beautiful wood grain effect on the blade called senbon kurokaki, which means one in a thousand black persimmon trees, regarded as the most valuable wood and were presented to Japanese emperors in ancient times.
