It has been made from stain resistant Damascus steel and has a smooth mahogany wood handle. A Japanese knife for professional chefs, it has a symmetrical 50:50 double edged blade with a unique and beautiful hammered texture (tsuchi-me), a VG-10 steel core and hardness Rockwell C scale of 57. The Sujihiki is best suited to slicing so is ideal for slicing boneless fish filets, boneless roasts, hams and poultry breasts. It also has a beautiful wood grain effect on the blade called senbon kurokaki, which means one in a thousand black persimmon trees, regarded as the most valuable wood and was presented to Japanese emperors in ancient times.
