 Ingredients

- 2 garlic cloves  
- Thumb-sized piece of ginger, sliced (plus extra for garnish)  
- 1½ tbsp white miso paste  
- 1 tbsp sesame paste (tahini or neri goma)  
- 15g dried shiitake mushrooms  
- 1 litre vegetable stock  
- 2 tbsp soy sauce  
- 200g firm tofu, cut into cubes  
- 1 tbsp cornflour  
- 1 tbsp vegetable or sunflower oil  
- 100g ramen noodles (or rice noodles)  
- 1 head pak choi, quartered  
- 2 spring onions, sliced (white and green parts separated)  
- 25g bean sprouts  
- 1 carrot, cut into thin matchsticks  
- Sesame oil, chilli oil, or sriracha (optional toppings)  
- Fresh coriander, chopped (optional)  
- Crushed peanuts or nori flakes (optional)  


 How to make vegan ramen

Step 1  
Crush the garlic and add it to a saucepan with ginger, miso paste, sesame paste, mushrooms, vegetable stock and soy sauce. Bring to a gentle simmer and cook for 10–15 minutes to develop flavour.

Step 2  
Meanwhile, toss the tofu in cornflour. Heat oil in a pan and fry the tofu until golden and crispy on all sides. Set aside.

Step 3  
Cook the noodles according to package instructions, then drain and set aside.

Step 4  
Strain the broth into a clean pan, then add pak choi and spring onion whites. Simmer for 1–2 minutes until just tender.

Step 5  
Divide noodles into bowls, pour over the hot broth, and top with tofu, bean sprouts, carrot, and spring onion greens.
